You know, I like to save money were ever I can and it really bothered me that it was costing you and me $9.99 for a container of mascarpone cheese for my low carb fake rice. So, I thought if I could replace the mascarpone cheese with something else and still have great flavor I would play around and experiment until I could make a cheaper low carb fake rice.
I think I found a great substitution using ricotta cheese, when I can get it on sale I pay $2.99 which is way better and more reasonable then spending a fortune on the mascarpone.
This is the only change I made in the Revised Low Carb Fake Rice Pudding, I honestly cannot tell the difference.
So lets get started and I will show you how to make!
1 whole head cauliflower shredded
1/2 cup whipping cream (35%)
300g ricotta cheese
3/4 cup erythritol (sweetener)
3 eggs
2 teaspoons cinnamon
2 teaspoon vanilla
1/4 cup raisins (optional)
In a large bowl add whipping cream, mascarpone cheese, erythritol, eggs, cinnamon and vanilla, mix with an electric beater until smooth.
Scrape the sides of the bowl with a spatula and mix one more time.
Add the shredded cauliflower, mix well.
Pour into a ovenware dish, sprinkle the top with cinnamon.
Preheat oven 375F
Place in oven on middle rack, bake for 40 minutes.
Servings: 8
Yield: 4.6 net carbs
With raisins the carb count is: 8 net carbs
