Paula sent me a message and has graciously given me this recipe so I decided to call it Paula’s Low Carb Hot Breakfast Cereal! When cold weather arrives, there’s nothing better than a steaming bowl of Paula’s Low Carb Hot Breakfast Cereal to start the day right.
You can add some delicious combinations of ingredients for topping your hot cereal. You can add sweetness, others add crunch, fiber, spice flavors and fresh fruit or just eat it as is. All will help you get the day off to a great start.
In her own words this is what she says:
“So, I had a very simple recipe to give you and since I don’t have a channel, you may have it if you like it. This came about when I was looking for a keto hot cereal on YouTube and they are all so complicated and too many ingredients. I was looking for something like a cream of wheat from my childhood.
This is what I made:
6 Tablespoon fine almond flour (36 grams)
2 teaspoon golden flaxseed meal (it does make a difference; the regular is kind of “fishy”)
1/4 cup almond milk
1/4 cup water
4 drops stevia or 1 1/3 teaspoon erythritol/monk fruit
dash salt (1/8 teaspoon)
Toss these into a microwaveable bowl or a stovetop saucepan and bring to a boil for a minute or so. Remove from heat and let sit for a few minutes; just enough to be a good temperature to eat it.
This is really it. A person can certainly add more sweetener (maybe even brown sweetener), butter or cream or other toppings of choice. I just love it as-is.
It reminds me of my mom’s weekend breakfasts years ago.”
