Low Carb Zucchini, Ravioli ? I’m not sure what to call this amazing recipe, it is so delicious. To think there are no noodles other than zucchini made into noodles. The amazing thing is that you only need a potato peeler to make these great noodles. I just happen to have a Ultimate Miracle Chef Slicer. I tried looking it up on the internet and found a YouTube video saying that it is a mandolin ,here it is to watch: https://www.youtube.com/watch?v=I15-htHJF_I It makes very thin strips of zucchini , you need them very thin so they are very flexible.
What a quick and delicious meal. It personally reminds me of a lasagna and you will find when you cook it on the BBQ or oven it is quite juicy but leave it sit uncovered for 10 minutes and the liquid absorbs. It is so good:)
2 medium zucchini
1/2 pound lean ground beef
Herbamare spice
1/4 cup chopped onions
100 grams chopped mushrooms
237 grams Ricotta Cheese
10 slices mozzarella cheese (Black Diamond Slices)
2 1/2 cups marinara sauce
1/2 cup Parmesan cheese
Using a slicer or potato peeler thinly slice zucchini ( looks like large sliced dill pickles)set aside
Cook ground beef with onion and herbamare or salt and pepper
Mix cheese and ground beef together
Overlap two zucchini slices together then crisscross 2 overlapped zucchini pieces on top of the first 2 pieces of zucchini to make a CROSS.
Using a ice cream scoop, scoop the cheese, meat mixture in the center of the crossed zucchini. Fold all zucchini sides over the meat mixture, turn them upside down with the loose ends of zucchini on the bottom
Place each wrap in Foil Pan for the BBQ add mozzarella cheese slices and place on each zucchini wrap
Spread marinara sauce over the whole dish
Sprinkle with Parmesan cheese
Cover with foil
Heat BBQ 375 F cook for 35 minutes
You will find when you remove the foil off the pan that there is a lot of juice, let it sit for 10 minutes and the liquid will absorb
