I have had so many commitments this month that I would like to take the time to apologize for not being able to keep up with my recipes. We have been very busy renovating our townhouse to get it ready to put it on the market.
I am exhausted and so happy we are finished and I can get back to my so called retirement living, ha ha!
This Low Carb Yellow Spicy Cauliflower Rice is a nice change which has a sweet taste from the raisins, spicy from the pepper flakes with a little crunch from the pecans.
This dish does have quite a kick with the pepper flakes so if you are not excited to have it to hot then cut the measurement in half. Enjoy!
1 head shredded cauliflower
1 tablespoon olive oil
1 small onion chopped
1 can Coconut Milk
1/2 teaspoon turmeric
1/4 teaspoon sea salt
1/2 teaspoon coconut palm sugar
1/8 teaspoon cinnamon
pinch of cardamon
1/3 cup golden raisins
1 teaspoon crushed red pepper flakes (cut back to 1/2 teaspoon if you don’t want it to spicy)
1/3 cup crushed pecans
Shred Cauliflower in food processor and set aside.
In a skillet add oil, saute onions until translucent, add coconut milk, turmeric,salt,palm sugar,cinnamon, cardamon.
Remove skillet from the heat and add the raisins and let the raisins steep in the sauce for approximately 20 minutes.
Bring the sauce to a boil add the shredded cauliflower, pepper flakes and mix well.
Cover with a lid and simmer on medium heat for 10 minutes.
Place rice in a serving bowl and add pecans on top.
Ready to serve
