This Low Carb tasty fish dish is one-pot cooking at its best. Enjoy this mixture of delicious vegetables with fillets of Tilapia.
To be honest I am not a fish eater, this is why I haven’t rushed to put any fish recipes on my blog. I was raised eating breaded fish out of a box and dipped in a lot of catsup. (I must say I did like it that way)
It has been years since I have even eaten fish but this Low Carb Fish Dish is quite tasty. I chose to cook Tilapia because it is a very white meat and I find it does not have a fishy taste.
The vegetables are very delightful with the fish which makes it a perfect combination.
This recipe is so easy to put together being all in one pot. Surprisingly I thoroughly enjoyed this recipe and I hope you do to!
2 fillets of Tilapia Fish
salt
1 Fennell
2 tbls olive oil
100 gram of chopped carrots
1 leek
1 medium zucchini
1 tbls + 1 teaspoon of fresh rosemary
¼ tsp red pepper flake
2 cups of diced tomatoes
1 cup white wine (any kind)
Salt and pepper
Sprinkle salt on both sides of fillets, set aside
In large pan heat oil, add chopped carrots, leeks, fennel, zucchini, rosemary, red pepper flakes, diced tomatoes and white wine.
Let it simmer for approximately ½ hour until most of the juices have evaporated.
Add the fillets on top of the vegetables, cover, let simmer for 20 minutes.
Ready to serve, use a lifter and scoop the vegetables and fillet out of pot at same time onto your plate and enjoy!
Makes 2 servings of fish, 4 servings of vegetables
Yield: 10.4 per serving
