This recipe is a substitute for our well known Sweetened Condensed Milk. This Low Carb Sweetened Condensed Milk does not have a speck of milk in it but it is a great recipe to add to some of your favorite baking dishes. It works very well in a low carb coconut macaroon or even Low Carb Magic Cookie Bars.
So lets get started and I will show you how to make it!
2 eggs
1 cup powdered erythritol
1/2 tablespoon maple extract
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon xanthan gum (I changed this from 1 teaspoon to 1/2 teaspoon)
In a bowl add all the ingredients except the xanthan gum, mix well with an electric mixer.
Once it is mixed well, gradually add the xanthan gum while the electric mixer is beating the mixture.
It will become thick like the real sweetened condensed milk.
Keep refrigerated ( know more then 2 days)
Now you are ready to add to any recipe!

Yield: 3.1 net carbs
