I don’t know about you but in our household, the bowl of stuffing on the table is more important than the turkey. Turkey stuffing is a delicious and anticipated part of Thanksgiving and Christmas, and I think I have the best low carb recipe out there.
I don’t think you would ever think of making the stuffing with cauliflower, but man is it ever delicious. The only thing I wished I did with the video was cut the cauliflower into small pieces instead of shredding it. . The only difference is the stuffing does not stick together were as using bread it does.
½ cup butter (you could use 3/4 cup)
3 tsp poultry seasoning
1 ¼ tsp salt
¼ tsp pepper
1 medium chopped onion
2 stalks celery
1 head cauliflower (cut into small pieces or shred)
5 eggs
In skillet melt butter, add poultry seasoning, salt and pepper, sauté onions and celery
Push onions and celery a side and add eggs, let scramble into small chunks
Add cauliflower mix well and cook through
Makes 6 servings
Yield: 4 net carbs
