December is right around the corner so get your sweet tooth ready for the holidays with these adorable Low Carb Strawberry Santa Claus’s. The carb count is so low you can have more than two 🙂 they are so cute, adorable and tasty at that. Lots of fun for the children and adults to, I served them just recently and they were a hit.
Tip: In this recipe I use powered xylitol but you can use stevia or any other sweetener.
25 fresh strawberries
250g Philadelphia cream cheese
3 tbls xylitol
1 tsp. vanilla
1. Rinse strawberries cut the point part of the strawberry to make Santa’s hat.
2. Remove the leaf and a small amount of the strawberry to make Santa sit level then set aside.
3. In a mixing bowl, beat cream cheese, powdered sweetener, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off or use a cake decorating machine. I start by making the head of Santa and add a beard.
4. On Santa’s hat add a ball of the cheese mixture.
5. Once strawberries are filled and they look like Santa serve immediately, or refrigerate.
Yield: 25 large strawberries = 1.5 net carb per serving.
