1 10.1g package Strawberry Jell-O (sugar free)
1 cup boiling water
Add water to strawberry jell-o, stir until crystal dissolves, place in fridge for approximately 22 minutes, and remove from fridge when starting to get thick.
Crust
1 ½ cups ground almonds
3 tbsp. xylitol (sweetener)
¼ cup soft butter
Mix crust ingredients together, press crust in bottom of 9 x 13 ovenware dish, preheat oven to 350 F place on middle rack, bake for 10 minutes.
Filling
1 package of cream cheese (250 g)
¾ cup of xylitol (sweetener) place in food processor to make xylitol into powder
1 tsp. vanilla
8 strawberries pureed or mashed
Mix all filling ingredients together with electric mixer.
Fold in jell-o and thawed 1 litre container of Cool Whip.
Pour filling on top of crust in 9 x 13 dish, cover with plastic, put in fridge to set.
When you’re ready to serve, slice fresh strawberries and place on each serving.
Yield: 18 pieces @ 6.8 net carb per piece
