Cauliflower is our substitute for rice. It eliminates the carb problem and is delicious. The texture is similar, and with the proper seasonings, any rice dish can be duplicated.
Low Carb Spanish Cauliflower Rice is a well-loved side dish or main dish that’s as easy and quick using chicken broth, tomato sauce, and seasonings.
I love that it comes together in less than thirty minutes and just takes one skillet to prepare. Just add ground beef , chicken or any meat of your choice in this rice dish, because it really makes it that much more heartier and satisfying. It’s such a great and healthy alternative to rice, and one that is packed with nutrients.
So lets get started and I will show you how to make it!
1 Medium Shredded Cauliflower
1/2 cup approx. (83 gram) red pepper
1 cup approx. (50 grams) chopped white onion
1 cup approx. (122 grams) chopped white mushrooms
1/4 cup approx. (64 grams) butter
1/2 cup (120 grams) chicken broth
1/4 cup (56.2 grams) tomato sauce
1 tablespoon minced garlic
1 teaspoon turmeric
1 teaspoon paprika
1 teaspoon herbamare
1 teaspoon cajun spice
Shred cauliflower, place in skillet and leave a hole in the center add the butter, pepper, onion, mushrooms, broth, tomato sauce, garlic, tumeric, paprika, herbamare and cajan spice.
Once everything is added, mix all ingredients together , then cover with a lid and let cook until all ingredients are soft and cooked.
Remove lid, simmer and stir occasionally until everything is tender.
