Rice makes the perfect side dish because it’s versatile and can be a blank canvas for all kinds of flavors. So lets remove the rice and substitute with cauliflower. You know Cauliflower can do no wrong in my eyes. This low carb cauliflower simple rice recipe , it is way healthier then regular rice, simple and delious, lightly spiced fried rice. I did not realize it but I make this recipe quite often. It’s the butter that makes it so tasty, I just love it.
In this recipe I only use 1/2 the cauliflower to make the flavors more intense, but I also use the same amount of ingredients for a whole cauliflower. The flavor is more mild with the whole batch but still delish.

1 medium cauliflower or use 1/2 cauliflower
2 eggs
1/2 cup butter
1 tbls grainy mustard
1 tsp chili powder
1 clove garlic
1/4 tsp salt
1/4 tsp pepper
Instructions:
In a food processor using the shredding blade, shred the cauliflower into rice.
In a bowl mix eggs,mustard, chili, garlic, salt and pepper.
Put cauliflower into the frying pan, melt the butter and mix well.
Add the egg mixture and stir to mix in with the rice.
Cook for approximately 30 minutes, stir occasionally.
Servings: 9
Yield: 2.2 net carbs
