We eat plenty of ground beef, I am always looking to find great recipes to give us variety. So here is a Low Carb Sicilian Meat Roll, it has great flavor, I mean GREAT FLAVOR! This is a wonderful twist to a regular meat loaf, rolling the meat can be intimidating but don’t worry it is so easy. I try to describe it in the instructions below and if you can’t figure it out, view my video and it will make it much easier. You could freeze the roll and bake later or bake and freeze half for another time.
2 beaten eggs
1/4 cup Heinz low sugar Ketchup
1 Tablespoon dried parsley
1 small clove minced garlic
1/2 teaspoon dried oregano
1 teaspoon Herbamare ( can use 1/4 teaspoon of salt instead)
1/4 teaspoon pepper
5 slices thin cooked ham (deli meat)
1 3/4 cups shredded mozzarella cheese
2 pounds lean ground beef
In a large bowl add ground beef , mix eggs,ketchup,parsley,garlic,oregano herbamare,pepper together ( I use rubber gloves to mix)
On a large piece of parchment paper, take the ground beef and pat the mixture into a 12 x 10 rectangle.
Arrange the ham slices on top of meat mixture to within 3/4 inch of edges. (that way you can press the meat mixture to stop the cheese from spilling out)
Sprinkle 1 1/2 cup of cheese over the ham.
Starting from the short end start rolling the meat mixture, using the paper to help keep it together. ( watch the video)
Lift the parchment with the roll of meat and place in a 13 x 9 x 2 inch baking pan.
Bake at 350 F about 1 1/4 hours or until done. You will find the center might look pink but that is from the ham.
Remove from oven top with cheese and bake until melted (5 minutes)
