What a light and refreshing salad that requires no cooking! Lime juice and cilantro are the key ingredients of this wonderful, healthy salad you’ll want to make all through the summer. Made with cooked peeled shrimp and the freshest ingredients – avocados, celery, cilantro, to top it off, tossed with some freshly squeezed lime juice. This quick and easy shrimp salad makes the perfect light meal or a substantial side salad.
¼ cup mayonnaise
1 tsp water
3 Tbls Chopped celery leaves
2 stalks celery
3 Tbls Chopped fresh cilantro
½ tps salt and dash of pepper
1 ½ limes
Zest of 1 lime
1 ½ pounds of cooked shrimp (remove tails)
2 avocados sliced
1 5- oz pack of baby kale salad
4 or more sliced radishes
In a bowl combine mayo, celery leaves, celery, cilantro, salt and pepper, radishes, lime zest, lime juice and shrimp.
(I bought frozen cooked shrimp and thawed, rinsed under water, patted dry and removed the tails).
Add baby kale and mix well.
Makes 4 large servings
