Great tasting low carb version of a traditional shepherd’s pie is made with better for you ingredients. Here we have a great mashed cauliflower topping in place of mashed potatoes with your ground beef, vegetables and cheese, for an added twist. So gooooood!
2 lbs of ground beef
1 cup chopped white onions
1 Tbsp Herbamare Zesty Spice
2 stocks of celery chopped
½ cup beef broth
1 Tbsp Worcestershire Sauce
1 Tbsp Heinz Reduced Sugar Ketchup
1 cup of Cheddar cheese or mixture of cheeses
2 cups of frozen or fresh mixed vegetable (green, yellow beans and carrots)
1 medium zucchini (yellow or green)
Completely cook ground beef, onion, spice, celery, broth, Worcestershire sauce and ketchup in frying pan. Add cooked vegetables and zucchini to meat mixture.
Topping
1 Cauliflower
¼ cup butter
1 tps Herbamare Zesty Spice
Steam 1 head of cauliflower for 15 minutes in a steamer or use a colander in a pot with approximately an inch of water in bottom of pot, cover and steam.
Cut up steamed cauliflower, place in food processor add butter and spice, blend to make a mashed consistency.
In a 9 x 11 ovenware dish spread hamburg mixture, add cheese equally on top of meat, spread mashed cauliflower on top( it works easier if you put large spoonful’s of cauliflower on the top of meat mixture, it makes it easier to spread compared to putting all the cauliflower in the center and trying to spread. Sprinkle with herbamare spice. Enjoy
Preheat oven 350F, bake for 40-45 minutes.
