I did not have any bourbon so I researched on the internet and found Scotch Whiskey was pretty close to Bourbon. So I played around with the flavors and this is what I came up with.
For that Super Bowl Party, just throw the bites in a bowl with toothpicks to serve with and you can enjoy these great Low Carb Scotch Whiskey Chicken Bites.
Oh yeah, they are great served with my Low Carb Cauliflower Rice.
So lets get started and I will show you how to make it!
Ingredients
2 lbs boneless chicken thighs 7 – 8 thighs
1 tablespoon butter
1⁄2 cup soy sauce (Tamari)
4 tablespoons rice vinegar
1⁄2 cup Scotch Whiskey or Bourbon
1⁄2 cup powdered erythritol
1/4 chopped onion
2 teaspoon powdered ginger
3 garlic cloves
Dice chicken thighs into bite sized pieces.
Melt butter in skillet, add pieces of chicken and thoroughly cook. Push the chicken to one side of the skillet and add onion and garlic, saute for a couple of minutes.
Add scotch,soy sauce, vinegar, ginger and erythritol, stir.
Occasionally stir, cook until liquid is reduced to a glaze on the chicken bites. ( approximately 30 minutes)
Servings: 8
Yield: 1.9 net carbs
