If you are looking for a meal in one, this Low Carb Scotch Egg is at the top of my list. I always thought this recipe would be difficult to make but I found it very simple. Who would think of wrapping sausage around a hard boiled egg, breading it and frying. Crazy! I just pick them up and eat them without cutting and using a fork, they are delicious hot or cold and very filling.
I guess the yolk of the egg is suppose to be a bit runny but I have not found the nack to get the right timing on cooking the eggs. But runny or not these Low Carb Scotch Eggs are delicious and definitely something to try.
7 hard boiled eggs
4 links of sausage or tube of breakfast sausage
1/4 cup coconut flour
1/4 cup Parmesan cheese
1/4 teaspoon Garlic Powder
salt and pepper
1 raw egg
1/2 cup avocado oil
Steam your eggs in a steamer for 10 minutes or boil for 4 minutes and let eggs sit in water for another 5 more minutes.
Place eggs in cold water, peel and completely dry each egg.
Remove skin from the sausage link which will make ground sausage and mix together.
Take a small section of sausage and flatten on the palm of your hand, take a hard boiled egg and press the sausage around the egg until the egg is completely covered with sausage. Repeat with all of the eggs
In a separate bowl add coconut flour, cheese, garlic powder, mix well.
In a separate bowl beat one egg.
Take egg covered in the sausage and dip in the egg and roll the egg in the flour mixture until completely covered.
Heat your oil in frying pan and add the eggs to the oil and cook each section of the egg until all of the sausage is completely cooked.
Serve hot or cold!
