Kids and Adults will love these Low Carb Sausage Wraps, well known as Pig in a Blanket! I used sausage for this recipe but you can also use hot dogs or even mini hot dogs. This is an amazing recipe with fantastic flavor, just add a little mustard on the side and you are all set.
If you’re looking for an easy appetizer or snack for a kids party, for the Super Bowl, game night or your run-of-the-mill Saturday night, just slice the Low Carb Sausage Wraps into sections and add a tooth pick and voila you have and appetizer.
So lets get started and I will should you how to make them!
4 large cooked sausage
1 cup shredded mozzarella cheese
2 oz cream cheese
1 beaten egg, room temperature
1 1/4 cups almond flour
1 teaspoon baking powder
1/2 teaspoon sea salt
Baste
1 tablespoon melted butter
1/4 teaspoon garlic powder
Mustard (optional)
Preheat oven 400 F
Pre cook your large sausage in a skillet and set aside.
In a microwave dish add the mozzarella cheese and cream cheese and microwave approximately one minute.
Remove from microwave and stir the melted cheeses together.
Add the almond flour, baking powder, salt to the cheese and mix well with your hand or stir with a spatula.
I like using a rubber glove to mix the batter, add the egg and mix well.
Place your batter on a silicone mat or parchment paper and place another silicone mat or parchment paper on top of the batter and using a rolling pin roll the batter out to approximately 1/4 inch.
Peel off the top silicone mat or parchment paper and score the rolled out batter into 4 squares.
Place one of the sausage on one of the quarter pieces of batter and by manipulating the silicone mat you can pull away the batter and roll the batter around the sausage. Pinch to join the batter around the sausage and place the seam on the bottom. Do this to all 4 sausages and place on a silicone mat on a baking sheet.
In a small dish melt your butter and add the garlic, baste each sausage roll and place in oven on middle rack and back for approximately 10 minutes until golden brown.
Serving: 4
Yield: 5.1 net carbs for the batter
Yield: 0 carb for sausage
