Yep Cauliflower again! This is a very simple recipe, Low Carb Roasted Cauliflower with Butter. Cooking the
cauliflower in chicken broth, bay leaves and thyme gives it a nice flavor especially when you add the butter. All you
do is set it on the table slice it like a piece of pie add a little more butter and it makes a great vegetable for any kind of meal.
1 head of cauliflower
4 cups chicken broth
Sprig of fresh thyme or sprinkle of powdered thyme
2 bay leaves
1/3 cup butter
Remove stems and leaves from the cauliflower, place in a pot, add chicken stock, bay leaves, sprig of thyme or sprinkle thyme and herbamare on top of cauliflower.
Bring to a boil then turn down to simmer for approxiamtley 10 minutes.
Preheat oven 400 F
Remove from the chicken stock and place in a ovenware pan. Pour butter over top and bake until cauliflower is tender (approx 10). ( poke with a knife, if it goes in easy and out easy then the cauliflower is done )
Add more butter on top and broil until the cauliflower is golden. Keep and eye so it does not burn.
