Cauliflower, Cauliflower, Cauliflower, I hope you are not tired of Cauliflower recipes because I have a delicious Low Carb Creamy Cauliflower Soup you must try. I have a friend that has been on a Keto Diet for 10 months and has lost 60 pounds. (I am so proud of her). She was raving about her cauliflower soup so I asked if I could try some? Well it is one of the best Cauliflower Soups I’ve ever had. It is thick, creamy and fantastic flavor!

So lets get started and I will show you how to make it!
1 large head of cauliflower
1/2 onion, chopped small pieces
2 Tablespoons butter
3 cups chicken stock
1 teaspoon garlic powder
1 teaspoon salt
6 oz. cream cheese
1 cup sharp or extra sharp cheddar cheese
1/2 cup heavy cream
Remove the leaves from the cauliflower, (keep the stock and use) in a steamer add the whole head of cauliflower and steam for approximately 30 minutes.
Remove cauliflower from steamer and chop into small pieces. Set aside
Chop onion into small pieces add to the butter in the cooking pot. Saute for approximately 2 minutes.
Add the chopped cauliflower, salt, garlic, chicken stock and let simmer for 5 minutes.
Pour the cauliflower mixture into a food processor and blend until completely smooth.
Return the smooth cauliflower mixture back into the cooking pot.
Cube your cream cheese and shred your cheddar cheese, add to the cauliflower and cook until the cheese is all melted.
Stir in your heavy cream, if the soup is to thick, add more chicken broth until you are happy with the consistency.
Taste your soup and add salt and pepper to your liking.
