I have tried so many versions of Low Carb Short Bread Cookies and I think this recipe is the BEST so far!!! It is a quick and easy recipe to put together and man oh man you will enjoy them!
So lets get started and I will show you how to make them!
Recipe:
1/2 cup (119 grams) soft salted butter
1/3 cup (65 grams) powdered Monk fruit/ Erythritol
1 teaspoon vanilla
1 1/4 cups (115 grams) almond flour
1/4 cup (25 grams) sifted coconut flour
1/4 teaspoon xanthan gum
1/8 teaspoon salt
With Electric Mixer, cream butter ,sweetener and vanilla together
In a separate bowl add all dry ingredients
Add dry ingredients to butter and I use my hand to mix thoroughly.
Using a silicone mat roll the dough into a log, place an elastic band around the silicone rolled mat with dough in it and place in fridge for 1 hour. This hardens the butter in the dough and makes it easier to cut into cookies.
Remove from fridge and slice the dough into 24 cookies
Preheat oven 350 F and bake for 14 minutes or until golden around the edges
Store in a sealed container in the refrigerator
