I am always looking for low carb substitutions for potatoes. One of my subscribers from my Youtube Channel asked me if I have ever used radishes in place of potatoes. I have not and never even thought it had a chance to be a substitution. So I took one radish and put it in a pot of water and boiled it until is was a tender texture. It had a bit of a different flavor but I though I would give it a try and see if I could make a Low Carb Radish (Potato) Salad.
My husband loved the Low Carb Radish (Potato) Salad and I personally thought it was OK. My girlfriend was over today and tried the Salad and she thought it was delicious and very surprise it was made out of radishes.
We all have different tastes buds and we all like different things. I don’t want to discourage you from not trying this recipe because it is worth the try.
So lets get started and I will show you how to make it!
Ingredients
1/2 cup mayonnaise
1 tbls vinegar
2 1/2 tsp powdered erythritol
2 lbs red radishes
2 raw radishes, sliced
2 stalks of celery, diced small
1/4 cup chopped onion
2 hard boil eggs
Wash the trimmed radishes and cut into quarters. Add water to a pot and bring to a boil. Add the radishes. Then reduce the heat to low, and simmer for 7 minutes.
The radishes should be soft and tender. Remove the radishes from the heat and set in a colander to cool and dry.
Steam or boil your eggs, peel and mash.
In a mixing bowl mix together the mayonnaise, sweetener, vinegar,celery, raw radishes,onions and eggs. Toss the radishes with the dressing and combine well.
Refrigerate until you’re ready to serve.
Servings: 10
Yield: 3.2 net carbs
