Pumpkin is a magical fruit that can taste amazing in both sweet and savory dishes. I prefer pumpkin’s sweeter possibilities so I thought it was time to share this.
Layer of silky pumpkin mousse and a delicious low carb cream cheese pound cake in place of ladyfingers to create a spectacular Low Carb Pumpkin Tiramisu that’s a terrific alternative to pumpkin pie.
This is a delicious low carb dish and great for any occasion, especially fantastic for Thanksgiving and Christmas.
So lets get started and I will show you how to make it!
1 1/2 cups chilled whipping cream 360 grams
3/4 cup sugar (150 grams)
1 (8-ounce) container ricotta cheese (227 grams)
1 (15-ounce) can pure pumpkin 425 grams
3/4 teaspoon pumpkin pie spice
(or 1/4 teaspoon each cinnamon, cloves, and nutmeg)

1/4 cup rum
Optional: 3 Low carb Gingersnap Cookies crushed (https://www.lowcarbrecipeideas.com/low-carb-gingersnap-cookies-dr-gundrys/
PREPARATION
Beat whipping cream and sweetener until peaks form. Add ricotta cheese, pumpkin, and pumpkin pie spice; mix filling is smooth.
Slice your pound cake, enough to fit the sides, bottom and an extra layer of a 9″ round springform pan.
Line bottom of 9-inch-diameter springform pan with slices of pound cake, overlapping and crowding to fit. Sprinkle with 2 tablespoons rum. Spread half of filling over pound cake.
Repeat with second layer of pound cake, remaining 2 tablespoons rum, and remaining filling. Smooth. You can take and cut off excess pound cake if sticking up past the filling.
Optional: Crush your Low Carb Gingersnap Cookies https://www.lowcarbrecipeideas.com/low-carb-gingersnap-cookies-dr-gundrys/
and sprinkle on top.
Wrap tightly in plastic. Chill overnight.
To remove from spring form pan, run knife around inside edge of pan. Release pan and lift of the dessert.
