This soup is thick and creamy thanks to the pumpkin and packs a whole lot of nutrients.
I used frozen pumpkin that I harvested this fall, but if you want to use canned goods, you sure can. You’ll still get the most amazing homemade soup that will warm your soul! It’s Keto and low-carb friendly, as well.
I use just one pot for this entire recipe, too. Clean up is fabulously simple and fast! It’s a sure win for you and your family!
1 pound (453 grams) lean ground beef
1 tablespoon butter
1/2 medium (71 grams) chopped onion
1 tablespoon minced garlic
1/4 teaspoon all spice
2 teaspoons spicy herbamare
1 teaspoon original herbamare
4 cups (900 grams)pumpkin puree
4 cups chicken broth
1/2 cup heavy cream
In a deep pot thoroughly cook ground beef, onion, garlic, all spice and both herbamare spices.
Add butter, pumpkin, chicken broth, stir and simmer.
Cook for about 10 minutes add the cream, stir and serve.
The soup is always better the next day.
