I never would eat regular pancakes, I just could not understand why so many people would sit down for breakfast and devour them. Because there are so many of you who love pancakes and miss pancakes, I thought I would add a Low Carb Pork Rinds Pancake to my recipes.
I am really glad I did because I found this Low Carb Pork Rinds Pancake is one of the better pancakes I have ever eaten. I found the texture a bit spongy but I truly had know issues with the whole package.
To think you can make pancakes out of pork rinds.
So lets get started and I will show you how to make it!
70 grams pork rinds (crushed) it worked out to be approximately a 1 cup
2 eggs
1/4 cup coconut milk
1 teaspoon cinnamon
2 tablespoons powdered erythritol
1/2 teaspoon vanilla extract
Using a coffee grinder, food processor or a bag with a meat mallet, turn the pork rinds into a powder.
In a bowl combine eggs,milk,cinnamon,vanilla and erythritol, blend well with a hand mixer.
Stir in the pork rinds and mix well with a spatula, let sit for 5 minutes to thicken.
I found it was to thick so I added more coconut milk to thin out the batter.
In a skillet melt a teaspoon of butter, pour the batter one at a time into the skillet, flip over the pancake when the top of the pancake looks dry.
Repeat the steps until all the batter has been cooked.
Servings: 4
Yield: 3.4 net carbs
