If your family craves Asian fare, but is concerned about the noodles, then this Low Carb Pork Lo Mein is going to be your answer! Let’s just eliminate the noodles and use bean sprouts. Noodles are not necessary they really are not.
My family loves this recipe and I am sure you will also.
2 lbs pork loin or tenderloin
½ tsp cinnamon
1/4 cup tamari (soya)
1 green onion (chopped)
2 tbls dry red wine
1 glove garlic crushed
3 tbls brown sugar (Ideal Brown)
Prepare Marinade
Combine soy sauce; wine, sugar, cinnamon, onion and garlic
in bowl.
Remove fat from pork, thinly slice.
Put the sliced pork in a Ziploc bag and pour the marinade over the pork.
Seal the bag and refrigerate for at least an hour (overnight would be better)
In a frying pan add tablespoon of olive oil then add marinade with the pork.
Cook until the pink is gone.
Ingredients for Cooked Pork
2 tbls sesame oil
1 tsp ginger
2 tbls oyster sauce
2 cups of bok choy chopped
1 ½ cups bean sprouts
1 tbls tamari (soya)
½ tsp erythritol or stevia, xylitol
Dash of pepper
Add sesame oil, ginger, oyster sauce, tamari erythritol and pepper in the frying pan with the pork.
Cook for approx. 3 minutes.
Add chopped bok choy, cook for 4 minutes.
Add bean sprouts, stir and mix together. Cook for another 4 minutes.
Ready to serve!
