Pizza, Pizza, Pizza, my husband loves pizza but we don’t have it very often so I thought lets make a casserole that tastes like pizza and hopefully he will be satisfied!. Well, I can tell you that Keith was not disappointed with this Low Carb Pizza Casserole. It is more the toppings that we all love on a pizza so with this Low Carb Pizza Casserole you are getting allllllll the toppings. It is so good and very easy to put together. The biggest job is prepping the onions, peppers, mushrooms and cheese, but worth the effort.
You will find there a a bit of liquid in the casserole so just let it sit for about 10 minutes and the liquid will absorb but mind you there still will be some liquid. I found the next day when warming up the Low Carb Pizza Casserole that the extra liquid was gone.
In fact the leftovers were even better then freshly out of the oven.
So Lets get started and I will show you how to make it!
30 pepperoni slices
1 1/2 lb. ground beef
1/2 to 1 teaspoon Herbamare
1 (14-oz) jar pizza sauce
1 medium chopped green pepper
1 medium chopped onion
1 (8-oz) package sliced white mushrooms
2 cups shredded mozzarella cheese
1 cup bacon crumble
INSTRUCTIONS
Dice green pepper, onion and mushrooms.
Add ground beef, onion and herbamare to pan. Cook until ground beef is browned.
Drain the grease and liquid off the meat. ( I used a sifter over a bowl and let the meat sit in the sifter, pressing with a spoon will push the liquid through into the bowl)
Spread pizza sauce on bottom of a 9”x 13” ovenware dish.
Add ground beef to cover the sauce , layer cheese on top of meat.
Layer of peppers
Layer of pizza sauce
Layer of mushrooms
Layer of cheese
Layer of bacon crumble
Layer pepperoni
Just keep layering until all the ingredients are used up.
Top with the rest of the cheese
Preheat oven 375 F
Bake in middle rack for 40 minutes
Servings: 8
Yield: 9.7 net carbs
