Try this Low Carb Pepperoni Mushroom Stuffed Chicken. Sometimes chicken can be so boring all by itself so lets spruce it up by adding pepperoni, mushrooms and cheese. This recipe is quick and easy and works really well on the barbecue. You could add a lot more cheese, mushrooms and pepperoni but I was trying to keep the carb count down. The best part of the recipe is the mayo and Parmesan on the top!
4 chicken breasts
4 white mushrooms chopped
20 pepperoni quartered
½ cup Monterey Jack Cheese
Sauce
¼ cup mayonnaise (Hellman’s)
¼ cup Parmesan cheese
½ tsp garlic salt
2 chopped mushrooms
1 tbls Parmesan cheese
Chop mushrooms, pepperoni, and mix in a separate bowl with the cheese.
If you are using thick chicken breast, cover with plastic wrap and flatten them with a meat hammer.
Take a quarter of the pepperoni, mushroom and cheese mixture and place on the center of each breast.
Fold the breast in half, place in an oven ware dish or a foil dish to place on the BBQ.
Sauce
Mix mayonnaise, cheese, garlic salt and chopped mushrooms in a bowl.
Spread sauce over all the chicken breasts.
Sprinkle 1 tablespoon of parmesan cheese on top of the sauce.
Preheat oven 350F bake for 45 minute
Cooking on the BBQ
Turn the BBQ on high for 5 minutes, turn temperature done to the lowest on the dial, this should give you a temperature of just under 400F.
Bake exactly as you do in the oven for approximately 45 minutes
