This recipe couldn’t get any easier then this Low Carb Peanut Peanut Butter Cookie. 1 cup of peanut butter, 1/2 cup of peanuts, 3/4 cup powdered erythritol plus 1 egg. That’s it, you bake , let cool and enjoy!
One of my YouTube followers Bev Grabtree told me about this recipe so I thought it would only be fair to share with everyone.
I remember growing up, one of my favorite recipes were Peanut Butter Cheerio Squares! Well this cookie reminds me of them, they are just missing the cheerios. They were my favorite, when I went to college my Mom would mail me a batch. Hmmmm they were so good and now you can almost have the same flavor when you make these Low Carb Peanut Peanut Butter Cookies!
So lets get stated ad I will show you how to make them!
1 cup natural peanut butter
1 cup powder erythritol (or sweetener of your choice)
1 egg
Preheat oven 350 F
Mix well in a bowl and I love using a cookie scooper to scoop the batter and place on parchment paper or silicone mat on a baking sheet.
Press with a fork.
Bake for 10 minutes
(you will find the cookies don’t get any larger and they are soft when they come out of the oven)
Let cool, store in a sealed container in the fridge
Serving: 21
Yield: 2.2 net carbs
