This is for all the Peanut Butter Lovers out there. I haven’t made any sweets as of late so I thought it was time to share one of my favorites. The carb count ends up being 4.3 net carbs per square but you must consider the calories are quite high also (102 calories). If you are trying to lose weight I would recommend waiting until you are in maintenance. So please, you must be very careful, they are so delish that you will want more. Keep control on these ones.
Tip: I find I make these squares in the cooler season. They are a soft bar and if making them in the hotter weather you will find they soften up quite a bit.
1 1/4 cup salted butter
1 cup unsweetened peanut butter
1 cup almond flour
1 1/4 cup powdered erythritol
100 g 85% dark chocolate bar
Peanut Butter Mixture
Combine 1 cup of butter, 1 cup peanut butter, 1 cup almond flour and1 cup erythritol in a saucepan.
Heat over low heat , stir constantly until dissolved
Pour into a 9×9″ ovenware dish and place in refrigerator for an hour
Chocolate Topping
In a saucepan add 1/4 cup of butter, chocolate and sifted powdered erythritol, cook on low heat until everything is melted and combined well.
Remove the peanut butter dish from fridge and pour chocolate on top.
Refrigerate preferably overnight.
Servings: 45 squares
Yield: 4.3 net carbs
