I found this recipe on djfoodie.com. I just had to try it to see if it as delicious as Dj suggested, well hats off to djfoodie.com 🙂 It only took 60 seconds to cook in the microwave it was very moist but still had a somewhat dry texture.
I don’t know how to explain it with the dryness, it’s when you are eating it sometimes it feels like it is hard to swallow. Sounds dumb but I don’t know how else to describe it.
The muffin has a lovely flavor with little sweetness so I added total of 2 tablespoons of sweetener and now it is perfect for my sweet tooth. I loved it, dj suggests this is the base and you can add berries, nuts, whatever you want. What a great base and only 3.5 net carbs per muffin!
So I changed the recipe up just a tad by adding 4 tablespoons of butter to see if that dryness would disappear and added the extra sweetener. I think it has improved the recipe immensely.
Dj also suggests that you don’t have to use all the ingredients. You can eliminate protein powder and almond meal from the recipe and it still will turn out lovely. I have not tried it this way but this is there suggestion.
When you crave something sweet this is quick, easy and satisfying!

1 tbsp coconut flour
1tbsp almond flour
1 tbsp protein whey powder
1 tbsp erythritol (they used swerve) (I used 2 tablespoons)
1\2 tsp baking powder
Dash of salt
1 whole egg
1 tbsp melted butter (I used 3 or 4 tablespoons)
1/2 tsp vanilla extract
cool whip optional
In a large mouthed coffee mug or soup cup, combine your coconut flour, almond meal, protein powder, sugar replacement, baking powder and salt.
Mix in your egg, melted butter and vanilla.
Microwave on high for 60 seconds.
Makes 1 serving
Yield: 3.5 net carbs
