Who would think you could make peanut butter cookies without any type of flour? Well this recipe is a great recipe for anyone that is looking for a low carb sweet and the carb count is so low compared to a cookie bought from the store. I was checking some of the store bought cookie labels and the lowest carb count I could find was 17 net carbs and up.
2 cups Organic Peanut Butter (can use regular, carb count higher)
½ cup Xylitol
2 eggs
In mixing bow beat with electric beater the peanut butter, xylitol and eggs.
Roll into one inch balls, measures out to be a tablespoon each.
Place on a cookie sheet covered with parchment paper.
Preheat oven 350F place on middle rack in oven, bake for 10 to 12 minutes. You may think the cookies are not completely cooked but they are. Remove from oven and let cool.
Yield: Makes 40 cookies
1.25 carbs per cookie
