This is an easy to whip together Low Carb No Bake Cheesecake; it’s beautiful, sweet with a velvety smooth and rich texture. Take some fresh strawberries and add to the top and your all set to go. This recipe is low carb compared to what you would be taking in with the regular way to make a cheese cake. Us low carbers will surely enjoy and not feel guilty.
In the video I used 3/4 cup of xylitol but found it to be to sweet. I now use 1/2 cup of xylitol and find it does the trick.
Crust
1 1/4 cups ground almonds
3 tbsp. xylitol (sweetener)
¼ cup soft butter
Mix crust ingredients together, press crust in bottom of ovenware pie plate, preheat oven to 350 F place on middle rack, bake for 10 minutes.
Filling
8oz Philadelphia cream cheese
2 cups frozen dessert whip (Cool Whip)
1/2 cup powered xylitol
Thaw dream whip, separately blend cream cheese with powered xylitol, and then add dream whip mixture.
Fill crust and let stand until ready to serve in fridge, add topping.
Strawberries are optional!
