I used a blend of red wine, yogurt, and mushrooms in this superb low carb mushroom stroganoff. Great recipe for vegetarians, the nice thing is you can add ground beef, zucchini noodles or anything to spruce it up. Cooking all the ingredients over high heat ensures that they develop a rich flavor. When we go to restaurants my husband will order this type of meal were I choose more simple flavors. He absolutely enjoyed this recipe were I thought it was ok. But I bet there are many of you out there that will love this recipe.
2 tablespoons butter
1 large onion, chopped
1 pound of mushrooms, sliced
3/4 cup red wine
1 tablespoon of Worcestershire sauce
Pinch ground nutmeg
Pinch ground cinnamon
¾ cup plain yogurt
Ground pepper
Chopped parsley
Melt butter in skillet and cook onions 2-3 minutes
Add mushrooms and cook for 5 minutes
Stir in wine, Worcestershire sauce, nutmeg and cinnamon. Simmer for 10 minutes until liquid is reduces to half.
Mix in yogurt, season to taste with salt and pepper. Sprinkle with parsley to serve.
Optional: Serve over zucchini noodles.
Makes 4 servings
Yield: 4 net carbs per serving not including the zucchini
