Are you looking for a meatloaf recipe you can count on? Well this low carb meatloaf will meet your expectations. I grew up with this recipe and the family always asks for more. It does fall apart a little but it’s the taste you are looking for. I was having a church potluck so I made them into muffin size, they almost look like extra-large meatballs but is the perfect size per serving.
3lbs lean ground beef
1 cup of chopped onion
1 10oz can Campbell’s Vegetable Soup
1 10oz can Campbell’s Tomato Soup
Herbamare Spice or salt and pepper
Mix together: ground beef, soups, onion and seasoning.
Spray muffin tins with Pam; add a half cup of meat mixture in each.
Top each meatloaf with Heinz Reduced Sugar Ketchup.
Preheat oven 375 F bake for 30 minutes.
Makes: 24 mini meat loafs
Yield: 4 net carbs per serving.
