Low Carb Meatballs with Creamed Spinach


What are your thoughts on frozen spinach? Any time I go to use it, all I think about is watching a cow chewing on its cud. I actually looked up what cud was and found out that a cow will chew his food and swallow it into its first section of its stomach, once its moist enough the cow brings it back up and chews it again. Now since I have discouraged you from wanting to eat frozen spinach it is actually really good for you and it works well in this Low Carb Meatballs with Creamed Spinach.

So lets get started and I will show you how to make it!


1 medium onion

3 clove Garlic Raw

12 ounces meatballs

1 tablespoon olive oil

1 1/2 cup peppetizer roasted red pepper spread) or marinara sauce

4 ounces mozzarella cheese

1 cup heavy cream

14 ounces frozen spinach

3 garlic cloves

1/4 teaspoon pepper

1/8 teaspoon nutmeg

Instructions

I made my own meatballs by adding a chopped onion and herbamare, mix well, roll into balls, fry in the frying pan, set aside.

Heat oil in large skillet, cook onion until tender

Add crushed garlic, stir

Add frozen spinach, cook until thawed.

Add pepper, nutmeg,

Stir in cream

Add cooked meatballs , pour peppetizer or marinara sauce over the entire dish

Spread mozzeralla cheese over the top.

Turn oven on Broil

Place oven dish on middle rack until cheese is melted.

Servings: 6

Yield: 15.6 net carbs
