Well I had no intentions of doing a recipe in the crock pot this soon but the night prior I cooked up a couple of my center loin pork chops on the BBQ and they were the toughest piece of meat I’ve ever had. I hated to waste the rest of them so I thought if I put them in the crock pot it would make them tender. So I decided to add a twist by adding orange flavor to the recipe. It has a very mild flavor of orange and very enjoyable.
1 Tbs. extra-virgin oil
8 lean boneless center cut pork chops
1/3 cup orange juice
2 Tbs honey
1 tsp. salt
1 tsp splenda brown sugar
1 tps. grated orange peel
¼ cup water
½ heaping tsp. of Thick-It-Up (Dixie carb Counters)
1 tps. Orange extract
½ tps. stevia
Heat oil in large skillet over medium – high heat until hot. Sear chops on both sides about 1 to 2 minutes, turning each chop as it browns.
1. Combine orange juice, honey, salt, brown sugar and orange peel in crock pot. Add chops, turning each chop to coat well. Cover: cook on Low 6 hours.
2. Transfer chops and keep warm. Strain cooking liquid into small saucepan, add stevia, thick it up in water and orange extract. Cook over medium high heat until liquid begins to boil and thickens.
3. Pour sauce over chops and serve.
Thick it up will thicken more once removed from heat.
