This Low Carb Lettuce-Wrap with Ground Meat is absolutely delishes. In this recipe I used a mixture of pork and lean ground beef but you can use ground pork, chicken or turkey. Wrapping the ground meat inside a lettuce leaf is amazing. You get that great crunch from the lettuce and then your taste buds go crazy with the meat flavor. It is a little hard wrapping the lettuce but if it does not work for you just chop up the lettuce and mix it with the meat.
So lets get started and I will show you how to make it!
1 1/2 lbs ground pork and beef mixture ( you can use all pork or chicken)
8 finely chopped mushrooms (white or any Chinese mushroom, example Shiitake mushroom)
1 227 gram can of water chestnuts drained and chopped
salt and pepper to taste
4 teaspoon tamari (soya sauce)
3 teaspoon dry White Wine or Chinese Rice Wine
2 tablespoons avocado oil
1 1/2 teaspoon ginger root shredded
1/2 cup finely chopped onion
4 tablespoon oyster sauce
1 tablespoon sesame oil
In a mixing bowl mix the ground meat with the water chestnuts, mushrooms, onion, sweetener, soy sauce and wine.
Heat the oil in a skillet add the ginger and stir fry for one minute followed by adding the meat. Stir and cook until the meat is cooked.
Add the oyster sauce and sesame oil, blend well and cook for one more minute.
Separate the lettuce leaves from the head of lettuce, place a large spoon full of the mixture on the leaf. Start rolling the leave and tuck in the sides of the leaf until you have a little parcel. (watch the video)
When I serve I leave the meat mixture in a bowl and have the leaves all separated so each person can roll and make there own.
