I always look at the discount fruits and vegetable cart to see what kind of deal I can find. I needed a lemon so I found a package of 5 lemons for $1.00. I ran out of my lemon pepper spice so I thought this was a good time to make my own so I could make one of my favorite low carb lemon pepper chicken dish.

It is a very simple recipe and worth the try.
So lets get started and I will show you how to make it!
Marinade
16 ounces Boneless, skinless chicken breasts or fillets
3 tablespoons lemon juice
1/2 teaspoon paprika
4 cloves garlic
4 teaspoons butter
1 teaspoon lemon-pepper seasoning
Place chicken, lemon juice, garlic and paprika in Ziploc bag, refrigerate for a couple of hours.
In a oven ware dish place the chicken fillets or breast on the bottom.
Melt your butter and baste the top of the chicken.
Sprinkle the lemon pepper seasoning on the top of the butter.
Bake uncovered for approx. 30 minutes or until chicken juices run clear. Spoon juices over chicken, if desired.
Lemon Pepper Spice Recipe
1/3 cup dried lemon zest = 5 lemons
1/3 cup freshly ground peppercorns
1/4 cup sea salt
Zest all the lemons, spread it on parchment paper on a baking sheet . Turn the oven on the lowest temperature (mine is 170F) until the zest is completely dry.
Remove from oven and using a coffee grinder or ninja food processor grind the zest to very fine.
Place zest, pepper and salt in a bowl and mix well.
Store in air tight container.
Instructions
Preheat oven 350F
Bake uncovered for approx. 30 minutes and juices run clear. Spoon juices over chicken, if desired.
