I love using cream of tartar in certain cookie recipes as it helps the cookies to rise more and helps gives a more lighter texture.
This is a soft, chewy lemon cookie with a light lemon flavor. It is a simple, crowd-pleasing recipe that everyone loves! Add more lemon zest for extra lemon flavor.
So lets get started and I will show you how to make them!
2 cup Almond Flour (192 grams)
2 tsp Cream of tartar
1 tsp Baking Soda
1/2 tsp Xanthan Gum
Pinch of salt
1/2 cup Butter (1 stick) 8 tablespoon butter (113 grams)
1/2 cup Erythritol, monkfruit combination (or choice of sweetener)(150 grams)
2 tbsp swerve brown sugar
1 Egg
1 tbsp Lemon Zest
1 tbsp Lemon Extract
2 tbsp Lemon Juice
In a large bowl, mix together almond flour, cream of tartar, baking soda, xantham gum, and salt.
In a separate bowl, using a mixer, cream together the butter, sweetener, eggs, lemon zest, lemon extract, and lemon juice.
Add in the dry ingredients to the butter mixture and mix with a blender or by using a spatula.
Line baking sheet with silicone mat or parchment paper.
I like using a cookie scoop or you can roll each cookie by hand.
Preheat oven to 350 F Bake for 12-15 minutes on middle rack
Let cool, store in sealed container in fridge
They freeze well.
