I love turkey and I find we only have it on special holidays. Well Thanksgiving has come and gone and here I am with leftover turkey. There is so much you can eat of plain old turkey, so lets turn it into a casserole. I love the mixture of turkey, mushrooms and broccoli. Ymmmm.
My Cheesy Tea Biscuits are a great biscuit to serve with this meal.
3 tablespoons butter
58 grams diced onion
227 grams sliced mushrooms
1/4 teaspoon thyme
3 crushed garlic cloves
1/2 cup chicken broth
1 1/2 cup heavy cream
1 1/2 cup Parmesan cheese
495 grams cooked turkey
344 grams broccoli heads
In a skillet, melt butter add onion, mushrooms, garlic, thyme. Cook till onions are transparent.
Add broth, cream and 1 cup Parmesan cheese, cook till sauce thickens.
In a ovenware dish add turkey, broccoli and pour the cream sauce over top and mix.
Preheat oven 350F
Bake for approximately 30 minutes
