Well, Thanksgiving is over in Canada and it is creeping up in the United States, if you are like me there is always turkey left over. Family Friendly Fat Burning Meals has a simple but nice recipe to make. The average soup is made with high carb noodles were as we are trying to find substitutes. If you would like to make your noodles look more like traditional, white noodles, then peel your zucchini and run it through a spiral slicer or use a simple veggie peeler to peel long flat strips of zucchini I leave the skin on to give me more fiber.

This is one of her recipes I would like to share with you, Low Carb Left Over Turkey Soup
• 1 Tablespoon olive oil
• 2 cloves garlic, minced
• 4 carrots, sliced
• 3 celery stalks, sliced
• 1 onion, chopped
• 6 cups chicken broth
• Salt and pepper
• ¼ cup fresh parsley, chopped
• 3 zucchini, peeled into noodles with a vegetable peeler
• 2 cups chopped, cooked turkey meat
INSTRUCTIONS
1. Heat the oil in the bottom of a soup pot. Add the garlic, carrots, celery and onion. Sauté for 5 minutes, until tender.
2. Add the broth and season with salt and pepper.
3. Bring to a simmer, then add the parsley, zucchini noodles and turkey. Continue to simmer for 5 minutes, until fully warmed. Enjoy!
