This Low Carb Cinnamon Buns recipe doesn’t require a ton of ingredients, Quick and easy from scratch, with no yeast, proofing, or kneading necessary! Cinnamon rolls are one of the BEST breakfasts , brunch or holidays when your family comes home or a great dessert when you are wanting something sweet.
You will find in the video I made 4 large Low Carb Cinnamon Rolls, then I made 8 Low Carb Cinnamon Rolls in which I did not use brown sugar, I just mixed the granular sweetener and cinnamon and it worked just as well. (More information below in description)
So lets get started and I will show you how to make them!
1 1/2 cups (150 grams) shredded mozzarella cheese
2 tablespoons (30 grams) cream cheese
1 room temperature large egg
3/4 cup (72 grams) almond flour
1/2 teaspoon baking powder
1/4 cup brown sugar swerve or homemade low carb brown sugar (notes below to make)
1/2 tablespoon ground cinnamon
1 teaspoon butter
Homemade Brown Sugar
1 cup erythritol
1 teaspoon molasses
Using a food processor add the erythritol and molasses, pulse until well mixed.
Store in a sealed container
Icing (Optional)
1 tablespoon unsweetened almond milk
1/4 cup confectioners sweetener (swerve) or powered erythritol, monk fruit
1/2 teaspoon vanilla extract
Mix well, if to thick add a bit more almond milk.
Preheat the oven to 350°F
Add the mozzarella and cream cheese in a microwave-safe bowl.
In the microwave melt the mozzarella and cream cheese on high for approximately 45 seconds (mine took 1 minute) or until melted, stir in room temperature egg until well mixed.
Add the almond flour and baking powder and stir into a smooth dough.
I like wearing rubber gloves, I find the dough does not stick to them. Roll the dough into a ball and then cut the ball into 4 even pieces.
Take each section and roll the dough out into a rope around 12 inches in length, then flatten with your hand until you have 4 thin strips of dough.
Brush your dough with soft butter
Mix your 1/4 cup of low carb brown sugar with 1/2 tablespoon of cinnamon and sprinkle it on each strip of the dough.
( In the video I made smaller rolls and just mixed 1/4 cup granular erythritol monkfruit mixture with a 1 teaspoon of cinnamon) I worked very well!
Roll each strip into a bun, place the cinnamon rolls in a grease ovenware dish, sprinkle the rest of the sugar mixer on top. (You could even add more of the sugar on top if you’d like)
Bake for 20 to 25 minutes until browned.
Remove from oven and place on a cooling rack.
