Low Carb Kalamata Olive Dip or Dressing
We were coming home from Florida in February of this year and stopped into Nordstrom’s for a little shopping. Our husbands, not at all interested in hanging out shopping, they decided to check out the little Bistro in Nordstrom’s. A Cute and quaint little restaurant we ordered our food and our husbands got this Kalamata Dip for their sweet potato fries. Very curious as to what it was I had a little taste and ended up devouring the dip on my salad. My husband is not fussy on olives, so the invitation was open for me to take over on the dip. The chef was kind enough to share her recipe so now I will share with you. Enjoy!
1 cup mayo (Hellmans 0 carbs)
1 Tb roasted garlic or fresh chopped garlic
1 tsp lemon juice
¼ cup pureed Kalamata Olives (approx. 8 whole olives)
Mix all ingredients thoroughly. Refrigerate
Yield: 1 carb per recipe.
