I was craving hummus and wondering if cauliflower would work for the base instead of chick peas? Well, I have the perfect solution for those hummus cravings with this delicious and easy cauliflower hummus recipe. It is very good, so good! I think this low carb cauliflower hummus is a fantastic substitute for chickpea hummus. It comes so close to the real thing I bet no one would guess it’s made of cauliflower.
This roasted cauliflower hummus is a great snack, served with my great low carb crackers or a variety of vegetables or you could just eat it with a spoon.
Just remember this is a base for the hummus, you can add an spice you’d like, you could even caramelize onions and add to make a great flavor!
So lets get started and I will show you how to make it!
1 medium cauliflower
1 tablespoon avocado oil
1/2 teaspoon herbamare or salt and pepper
1 teaspoon cumin
1/2 teaspoon smoked paprika
2 cloves minced garlic
1/3 cup tahini
Preheat oven 350 F
In a bowl add cut up cauliflower add avocado oil, herbarmare, cumin, mix well.
Place Cauliflower on a baking sheet and roast for 40 minutes or until they are soft.
Add the cauliflower to a food processor and blend well, add the tahini, garlic and paprika, Mix until it is blend well.
Place in a bowl , refrigerate until you serve.
Serving: 12
Yield: 2.4 net carbs
