You’ve worked all day, you’re tired and want something quick and easy to put together for supper.Let’s spice up your ground beef, add it to your romaine lettuce with peppers, tomatoes and cheese and you have a delicious low carb meal without the hassle of stuffing a shell. Yum Yum!
1 ½ lbs. ground beef
½ cup chopped onions
1 cup sliced white mushrooms
1 cup beef broth
1 package of Club House Taco Seasoning Mix
1 head of Romaine Lettuce (or more)
½ yellow pepper (any kind)
Cherry tomatoes
Shredded cheese of any kind
Combine ground beef with onion and mushrooms once cooked add broth and seasoning mix. Stir and cook until mixture is thickened.
Chop up a head of lettuce, chop peppers and tomatoes and shred a cup of cheese.
Place lettuce on plate (you choose the amount), 2 large scoops of ground beef mixture on top of lettuce. Add peppers, tomatoes and cheese on top.
Yeild: 4 servings, 7.96 net carbs
