Curry powder simmered with a variety of spices for an easy, one dish chicken dinner that’s bursting with flavor! The nice thing is you don’t have to have it with lettuce, you can also mix it with cauliflower rice or just eat it as your main meal and adding your choice of vegetables.
I am making this as a one serving but you can double, triple up to feed the whole family. Being on my own while my Husband it working at our daughters, renovating there bathroom and I don’t need extra food in the fridge. Plus I would like to have variety instead of eating the same thing over and over.
So lets get started and I will show you how to make it!
100 grams chicken breast
1 tablespoon chopped onion
1/2 cup chicken broth
1/8 teaspoon curry powder
1/8 teaspoon onion powder
1/8 teaspoon garlic powder
18 teaspoon cayenne pepper
1/8 teaspoon turmeric
1/8 teaspoon herbamare or salt and pepper
1/8 teaspoon stevia powder
Chopped romaine lettuce, or your choice of greenery and amount
Cut the chicken into cubes
Sprinkle herbamare on the cubed chicken
In a small saucepan add broth, onion and all the spices, when dissolved add the chicken
and cook down until you have half the liquid.
Remove from stove add the lettuce and mix well.
Place in serving bowl and enjoy.
