This Low Carb Blueberry Hot Porridge can be eaten anytime of year but now since we are into fall and the leaves are falling, the weather is cooling off this is a great time to have some warm comforting food for breakfast.
I missed eating porridge when I started low carb so I was so excited when I came up with this delicious, healthy low carb Blueberry Hot Porridge recipe. While it is not made from oats, it does an amazing job recreating the traditional recipe. It is served warm and is a delicious dish to start your morning! You can use coconut milk which has more fat content and will help you feel full longer, but I like to keep an eye on my calorie count as well so I use the unsweetened coconut beverage. Your choice!
Well lets get started and I will show you how to make it!
1/2 cup (109 grams) Unsweetened Silk Coconut Beverage
1 egg
1/4 cup ( 47 grams) frozen blueberries
1 tablespoon (14 grams) butter
1 tablespoon (7.6 grams) coconut flour
1/4 teaspoon psyllium
1 tablespoon (8 gram) sweetener (erythritol, monk fruit combo)
1 tablespoon (10.2 grams) chia seeds
In a bowl you are going to eat your porridge add all the dry ingredients, psyllium, sweetener, chia seeds, coconut flour. Mix well
In a separate bowl add in all wet ingredients, egg, coconut beverage. Mix well
Pour your wet ingredients into the dry ingredients and whisk until mixed well.
Add your butter and blueberries to your mixture.
Microwave for 2 minutes, remove from microwave and mix your porridge with a spoon.
You will find that you will get a porridge consistency.
