In Mexico, Horchata is one of the most common aguas frescas and is ladled from large glass jars set in ice. My husband ordered this drink when we were in Mexico and raved as to how tasty it was.
Me, being curious I took a little taste and found it very nice, very rich, and sweet and so on.
Well this was not on my list to enjoy unless I could make it low carb. It is not exactly like the original but I surely enjoy this beverage, it sort of reminds me of rice pudding with the cinnamon.
It is really good with an ounce of rum! I usually drink my rum with diet Pepsi but I hate the thought of all that aspartame. I think I now have a healthier choice.
In the video I used a different brand of Coconut Milk but the carb count was quite a bit higher. I found MILI Coconut Milk and it is only 2 carbs for ½ cup.
Tip: You can add more ice to make a slushy nice and thick or just a handful to make it a great drink.
1/2 cup almond milk
½ cup coconut milk (Mili Coconut Milk, ¼ cup 1 carb)
1/4 tps cinnamon
1/2 tps vanilla extract
4 tsp xylitol ( you could use stevia)
Handful of ice
Add all ingredients in a blender, mix well. The more ice you add the thicker your beverage will be.
