This Low Carb Artichoke Chicken dish is elegant enough for company but simple enough for weeknight meals. Couscous, Cooked cabbage, and green beans all make great side pairings for this delicious chicken dinner. Just throw it in the crock pot and you are all ready to go.
4 boneless, skinless chicken breasts
1 14 ounce diced tomatoes
1 14 ounce can of artichoke hearts in water, drained
1 small yellow onion, chopped
½ cup Kalamata olives, sliced
1 cup chicken broth
¼ cup dry white wine
3 tbls quick cooking tapioca
1 tsp curry powder
1 tbls parsley
1 tsp basil
1 tsp thyme
½ tsp salt
1/ tsp black pepper
Place chicken in bottom of crock-pot, mix all ingredients in a bowl, pour over chicken in crock-pot.
Cover, cook on low 6-8 hours or high 3 ½ to 4 hours until chicken is cooked.
