You will always hit a home run with your kids when you make chicken nuggets for supper. The nice thing is when you make them yourself you know they are getting a healthier version of those boxed ones. Everything in this recipe is so healthy and with the breading it seals in the moisture. I like eating Heinz reduced sugar ketchup with them!
½ cup almond meal
¼ tsp. garlic powder
¼ tsp. sea salt
¼ tsp paprika
Dash of pepper
1 egg
1 lb. chicken breast cubed
Preheat the oven to 425 degrees F. Cooking time 20 minutes.
Line a baking sheet with parchment paper.
Combine the ground almonds, salt, pepper, garlic and paprika in a bowl.
Whisk the egg in another bowl.
Dip the chicken pieces in the egg mixture, then coat in the almond mixture. ( using a fork and tossing the almond mixture over each piece of chicken works well)
Place on the prepared pan and bake for 10 minutes on each side.
Yield: 4 net carbs for the total recipe
